  1. Bring 2 cups of water to a boil in a pot. Remove from heat and add the tea bags. Let steep for 5-10 minutes until the tea reaches your desired strength.
  2. Remove the tea bags and stir in the honey until dissolved. Add in the lime juice and sugar and stir until combined. Taste and adjust sweetness if needed.
  3. Let the tea mixture cool to room temperature.
  4. Pour into ice cube trays and freeze until solid, at least 2 hours.
  5. Once frozen, pop the ice tea cubes out of the trays.
  6. For each serving, add 3-4 ice tea cubes to a glass. Top with 1 cup of sparkling water and some ice. Stir gently before drinking. Adjust ratios of tea cubes, sparkling water and ice to taste.
