- Preheat the oven to 375°F (190°C).
- Whisk together the flour, baking soda, and salt in a bowl; set aside.
- Using a hand mixer on medium speed, beat the butter and sugar together until combined (about 2 minutes).
- Beat in the egg, honey, and vanilla until mixed well.
- Gradually add the dry ingredients to the wet mixture and beat until the mixture becomes crumbly.
- Turn the dough out onto a lightly floured surface and roll it out to 1/4 inch thick.
- Cut the dough into shapes with a knife or cookie cutter.
- Place the shapes on a parchment-lined baking sheet.
- Bake for 6-8 minutes or until golden.
- Remove from the oven and place on a wire rack to cool.
