- Bring a large pot of water to a boil.
- Cut the zucchinis in half and remove the seeds.
- Once the water is boiling, immerse the zucchinis and let them cook for about 5 minutes.
- Drain the zucchinis and set aside.
- Finely chop the onion and garlic.
- In a pan with some olive oil, sauté the onion and garlic.
- Add the sausage meat to the pan, followed by the ground meat. Season with salt and pepper, then mix well.
- Let the meat cook for a few minutes, then add the tomato paste and stir until well combined. Set aside.
- Preheat your oven to 180°C (350°F).
- Fill the zucchinis with the meat mixture.
- Sprinkle some grated emmental on top, distribute slices of mozzarella, and drizzle with olive oil.
- Place the stuffed zucchinis on a baking tray lined with parchment paper and bake for 30 minutes.
