- In a bowl mix ground hazelnuts sugar vanilla baking soda and flour mix for about 10 seconds until well combined Scrape down the sides
- Add margarine apple sauce and salt then mix for 15 seconds until combined
- Form the mixture into a ball the dough will be very crumbly wrap in plastic film and refrigerate for at least 30 minutes
- Preheat oven to 165C
- Shape approximately 20 small balls Place them on a baking sheet lined with parchment paper and flatten them slightly
- Bake for about 20 minutes The cookies will still be slightly soft but will harden as they cool Transfer to a cooling rack
- Once completely cool spread chocolate spread or almond butter on half of the cookies and top with remaining cookies to make sandwiches
- Store in an airtight container at room temperature
