- Wash the kumquats thoroughly and remove their stems.
- Prick each kumquat multiple times with a toothpick. This allows the syrup to penetrate the fruit during cooking.
- In a saucepan, combine the water and sugar. Bring to a boil.
- Reduce the heat to a gentle simmer and add the kumquats.
- Cook for 15 minutes, then remove from heat and allow to cool completely in the syrup.
- Repeat this process daily for the next 4 days (15 minutes of cooking followed by cooling) for a total of 5 cooking cycles.
- For the final cooking on day 5, you may extend the cooking time slightly if your kumquats are large or not fully ripe.
- Once finished, the kumquats will be translucent and golden, resembling juicy candies.
- Transfer the candied kumquats and syrup to sterilized glass jars with airtight lids for storage.
