- Gently rinse the acacia flowers and pat them dry with paper towels. Make sure to remove all stems and green parts.
- In a large bowl, combine the flour, granulated sugar, and salt.
- Make a well in the center of the dry ingredients and add the egg and 1 tablespoon of vegetable oil.
- Gradually pour in the cold sparkling water while whisking to form a smooth batter with the consistency of thick cream.
- Let the batter rest for 30 minutes at room temperature.
- Heat the frying oil in a deep pan to 170°C (340°F).
- Dip the acacia flower clusters into the batter, ensuring they are well coated but not dripping.
- Carefully drop the battered flowers into the hot oil and fry until golden brown on both sides, about 2-3 minutes.
- Remove with a slotted spoon and drain on paper towels.
- Dust generously with powdered sugar while still warm.
- Serve immediately as a sweet treat or dessert.
