  1. Gently rinse the acacia flowers and pat them dry with paper towels. Make sure to remove all stems and green parts.
  2. In a large bowl, combine the flour, granulated sugar, and salt.
  3. Make a well in the center of the dry ingredients and add the egg and 1 tablespoon of vegetable oil.
  4. Gradually pour in the cold sparkling water while whisking to form a smooth batter with the consistency of thick cream.
  5. Let the batter rest for 30 minutes at room temperature.
  6. Heat the frying oil in a deep pan to 170°C (340°F).
  7. Dip the acacia flower clusters into the batter, ensuring they are well coated but not dripping.
  8. Carefully drop the battered flowers into the hot oil and fry until golden brown on both sides, about 2-3 minutes.
  9. Remove with a slotted spoon and drain on paper towels.
  10. Dust generously with powdered sugar while still warm.
  11. Serve immediately as a sweet treat or dessert.
