  1. Preheat the oven to 375°F (190°C).
  2. Whisk together the flour, baking soda, and salt in a bowl; set aside.
  3. Using a hand mixer on medium speed, beat the butter and sugar together until combined (about 2 minutes).
  4. Beat in the egg, honey, and vanilla until mixed well.
  5. Gradually add the dry ingredients to the wet mixture and beat until the mixture becomes crumbly.
  6. Turn the dough out onto a lightly floured surface and roll it out to 1/4 inch thick.
  7. Cut the dough into shapes with a knife or cookie cutter.
  8. Place the shapes on a parchment-lined baking sheet.
  9. Bake for 6-8 minutes or until golden.
  10. Remove from the oven and place on a wire rack to cool.
