  1. In a large bowl, whisk together flour, sugar, baking powder, and salt
  2. In a separate bowl, whisk milk, eggs, melted butter, and vanilla extract until well combined
  3. Pour the wet ingredients into the dry ingredients and whisk until just combined. Some small lumps are okay – do not overmix
  4. Let the batter rest for 5 minutes
  5. Heat a non-stick pan or griddle over medium heat
  6. Add a small pat of butter to coat the cooking surface
  7. Pour about 60ml of batter for each pancake
  8. Cook until bubbles form on the surface and the edges start to look dry
  9. Flip and cook the other side until golden brown
  10. Serve warm, dusted with powdered sugar
