- In a large bowl, whisk together flour, sugar, baking powder, and salt
- In a separate bowl, whisk milk, eggs, melted butter, and vanilla extract until well combined
- Pour the wet ingredients into the dry ingredients and whisk until just combined. Some small lumps are okay – do not overmix
- Let the batter rest for 5 minutes
- Heat a non-stick pan or griddle over medium heat
- Add a small pat of butter to coat the cooking surface
- Pour about 60ml of batter for each pancake
- Cook until bubbles form on the surface and the edges start to look dry
- Flip and cook the other side until golden brown
- Serve warm, dusted with powdered sugar
