  1. Line a loaf pan with plastic wrap ensuring enough overhang on all sides
  2. Pour the orange juice in a shallow dish
  3. Quickly dip each ladyfinger in the orange juice do not soak them too long
  4. In a large bowl whip the heavy cream with powdered sugar until soft peaks form
  5. In another bowl mix the mascarpone cheese with vanilla until smooth
  6. Gently fold the whipped cream into the mascarpone mixture
  7. Place a layer of soaked ladyfingers at the bottom of the prepared loaf pan
  8. Spread one third of the cream mixture over the biscuits
  9. Add a layer of mandarin segments
  10. Repeat the layers finishing with the cream mixture
  11. Cover with the plastic wrap overhang and refrigerate overnight
  12. The next day unmold the cake onto a serving plate
  13. Cover the entire cake with the remaining cream mixture creating vertical lines for a log effect
  14. Decorate with mandarin segments and any additional desired garnishes
  15. Keep refrigerated until serving
