  1. Make the pastry cream first Bring milk to a boil
  2. In a bowl whisk egg yolk with sugar until pale Stir in cornstarch
  3. Pour hot milk over egg mixture while whisking Returnto heat
  4. Cook stirring constantly until thickened about 1 minute Set aside to cool
  5. For the almond cream beat softened butter in a bowl
  6. Add almond flour powdered sugar and whole eggs one at a time Mix until light and fluffy
  7. Stir in cornstarch and rum
  8. Fold cooled pastry cream into almond cream mixture Refrigerate for 1 hour
  9. Place one round of puff pastry on baking sheet lined with parchment
  10. Pipe almond cream mixture in a spiral pattern leaving border
  11. Brush edges with egg wash Place second pastry round on top
  12. Seal edges well scoring with knife to create design
  13. Refrigerate for 1 hour
  14. Preheat oven to 200C 400F
  15. Brush top with egg wash Create decorative pattern with knife
  16. Bake at 200C for 10 minutes then reduce to 170C and bake 20 minutes more
  17. Dust with powdered sugar 5 minutes before end of baking
