- Make the pastry cream first Bring milk to a boil
- In a bowl whisk egg yolk with sugar until pale Stir in cornstarch
- Pour hot milk over egg mixture while whisking Returnto heat
- Cook stirring constantly until thickened about 1 minute Set aside to cool
- For the almond cream beat softened butter in a bowl
- Add almond flour powdered sugar and whole eggs one at a time Mix until light and fluffy
- Stir in cornstarch and rum
- Fold cooled pastry cream into almond cream mixture Refrigerate for 1 hour
- Place one round of puff pastry on baking sheet lined with parchment
- Pipe almond cream mixture in a spiral pattern leaving border
- Brush edges with egg wash Place second pastry round on top
- Seal edges well scoring with knife to create design
- Refrigerate for 1 hour
- Preheat oven to 200C 400F
- Brush top with egg wash Create decorative pattern with knife
- Bake at 200C for 10 minutes then reduce to 170C and bake 20 minutes more
- Dust with powdered sugar 5 minutes before end of baking
