- Mix flour brown sugar vanilla sugar baking soda and salt in a bowl
- Add the softened butter and egg to the dry ingredients and mix well until combined
- Form the dough into a ball wrap in plastic wrap and refrigerate for 2 hours
- Preheat the oven to 180C 350F
- Roll out the dough on a floured surface to approximately 5mm thickness
- Cut out circles using a glass as a cookie cutter
- Place cookies on a baking sheet lined with parchment paper
- Prick each cookie with a knife tip
- Bake for approximately 12 minutes until golden brown
- Allow cookies to cool completely
- Melt dark chocolate in a double boiler
- Let the melted chocolate cool for 30 minutes
- Using a brush coat each cookie with melted chocolate
- Allow chocolate coating to set completely before serving
