- Preheat the oven to 220°C (425°F)
- In a large bowl combine the mashed sweet potatoes sugar cinnamon salt ginger and cloves
- Add the beaten eggs to the sweet potato mixture and mix well until completely combined
- Gradually stir in the evaporated milk until the mixture is smooth
- Pour the filling into the unbaked pie crust
- Dust the top of the pie with additional ground cinnamon
- Bake at 220°C (425°F) for 15 minutes
- Reduce the oven temperature to 175°C (350°F) and continue baking for 40 to 50 minutes or until a knife inserted near the center comes out clean
- Remove from oven and let cool completely
- Refrigerate for at least 4 hours before serving
- Store any leftover pie in the refrigerator
