  1. Preheat the oven to 220°C (425°F)
  2. In a large bowl combine the mashed sweet potatoes sugar cinnamon salt ginger and cloves
  3. Add the beaten eggs to the sweet potato mixture and mix well until completely combined
  4. Gradually stir in the evaporated milk until the mixture is smooth
  5. Pour the filling into the unbaked pie crust
  6. Dust the top of the pie with additional ground cinnamon
  7. Bake at 220°C (425°F) for 15 minutes
  8. Reduce the oven temperature to 175°C (350°F) and continue baking for 40 to 50 minutes or until a knife inserted near the center comes out clean
  9. Remove from oven and let cool completely
  10. Refrigerate for at least 4 hours before serving
  11. Store any leftover pie in the refrigerator
