- Prepare steamed rice according to package instructions or using a rice cooker.
- Heat cooking oil in a large skillet over medium heat. Add the sliced onions and sauté until they are soft and caramelized.
- Add the thinly sliced Wagyu beef to the skillet and sauté quickly until the beef is browned. Be careful not to overcook it to retain the tenderness.
- Pour sake, mirin, and soy sauce into the skillet, followed by sugar, and stir to combine.
- Add dashi or beef broth to the mixture and bring it to a simmer. Cook for a few minutes to let the flavors meld together
- In a separate pan, fry eggs individually to your preferred doneness. Sunny-side-up or over-easy eggs are both common for this dish.
- Assemble the dish by scooping a portion of steamed rice into each bowl.
- Top the rice with a portion of the Wagyu beef and onion mixture.
- Gently place a fried egg on top of the beef in each bowl.
- Garnish with chopped green onions and pickled red ginger.
Note : Due to the high quality of Wagyu beef, you may want to cook it lightly to really appreciate the flavor and texture. Kagoshima Wagyu is known for its rich flavor, tenderness, and fatty, well-marbled texture, so a little goes a long way in this dish. Enjoy your meal with a side such as miso soup or some pickled vegetables for a complete Japanese experience.
