- Preheat your oven to 90°C (195°F) for making banana chips.
- Slice one banana into thin rounds, brush with lemon juice and a little honey if desired. Arrange on a baking sheet lined with parchment paper and bake for 2-3 hours until dried and slightly crisp. Allow to cool completely.
- In a mixing bowl, whip the cream with powdered sugar and vanilla extract until stiff peaks form.
- Take one lady finger biscuit and spread a generous layer of whipped cream on top.
- Add a thin layer of chocolate spread over the whipped cream.
- Slice the second banana and arrange a few slices over the chocolate.
- Place another lady finger biscuit on top and repeat the layers of cream, chocolate, and banana.
- Top with a third lady finger biscuit if desired, or leave as a double-layer sandwich.
- Decorate the top with more whipped cream, chocolate spread, and homemade banana chips.
- Arrange additional banana chips around the plate for decoration.
- Serve immediately or refrigerate for 30 minutes to allow the flavors to meld together.
