  1. Wash the kumquats thoroughly and remove their stems.
  2. Prick each kumquat multiple times with a toothpick. This allows the syrup to penetrate the fruit during cooking.
  3. In a saucepan, combine the water and sugar. Bring to a boil.
  4. Reduce the heat to a gentle simmer and add the kumquats.
  5. Cook for 15 minutes, then remove from heat and allow to cool completely in the syrup.
  6. Repeat this process daily for the next 4 days (15 minutes of cooking followed by cooling) for a total of 5 cooking cycles.
  7. For the final cooking on day 5, you may extend the cooking time slightly if your kumquats are large or not fully ripe.
  8. Once finished, the kumquats will be translucent and golden, resembling juicy candies.
  9. Transfer the candied kumquats and syrup to sterilized glass jars with airtight lids for storage.
