- Place the rack in the center of the oven. Preheat the oven to 180°C (350°F).
- Butter a 25 cm (10-inch) quiche pan and dust with sugar.
- In a bowl, whisk together the eggs, sugar, vanilla, and salt. (You can add 15 ml of kirsch to the egg mixture to enhance the cherry flavor.)
- Add the flour and whisk until combined.
- Incorporate the cream and milk, whisking until the mixture is smooth and homogeneous.
- Pour the egg mixture into the prepared pan and distribute the cherries evenly throughout.
- Bake for 35 minutes or until the clafoutis is golden brown.
- Let cool on a wire rack.
- Serve warm or at room temperature with a scoop of vanilla ice cream and a dollop of whipped cream topped with a fresh cherry if desired.
