- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy
- Add the egg, vanilla extract, and almond extract, mix until well combined
- In a separate bowl, whisk together the flour, gingerbread spice mix, and salt
- Gradually add the dry ingredients to the wet mixture, mixing until a dough forms
- Add the lime and mandarin zest, incorporate well
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour
- Preheat oven to 180°C (350°F) and line baking sheets with parchment paper
- Roll out the chilled dough on a floured surface to about 1/4 inch thickness
- Cut out shapes using your favorite cookie cutters – stars, circles, or holiday shapes
- Place cookies on prepared baking sheets, leaving space between each
- Bake for 10-12 minutes or until edges are lightly golden
- Let cool completely on wire racks before decorating with royal icing if desired
