  1. In a mixing bowl, whisk the egg yolks and sugar together until pale and fluffy.
  2. Add the softened butter to the egg mixture and combine using a wooden spatula until well incorporated.
  3. Sift the flour, salt, and baking powder directly into the bowl and mix until the dough becomes smooth and homogeneous.
  4. Wrap the dough in plastic film and refrigerate for 2 hours.
  5. Preheat the oven to 180°C (350°F).
  6. Remove the dough from the refrigerator and roll it out on a lightly floured sheet of parchment paper to a thickness of 1cm (about 0.4 inches).
  7. Using a 4cm (1.5 inch) round cookie cutter, cut out rounds from the dough.
  8. Place the cookie rounds in a silicone mold with 4cm cavities or directly on a baking sheet lined with parchment paper.
  9. Bake for 15 minutes until lightly golden.
  10. Remove from the oven, unmold the cookies, and let them cool completely before serving.
  11. Store in an airtight container or cellophane bags to maintain freshness.
