- In a mixing bowl, whisk the egg yolks and sugar together until pale and fluffy.
- Add the softened butter to the egg mixture and combine using a wooden spatula until well incorporated.
- Sift the flour, salt, and baking powder directly into the bowl and mix until the dough becomes smooth and homogeneous.
- Wrap the dough in plastic film and refrigerate for 2 hours.
- Preheat the oven to 180°C (350°F).
- Remove the dough from the refrigerator and roll it out on a lightly floured sheet of parchment paper to a thickness of 1cm (about 0.4 inches).
- Using a 4cm (1.5 inch) round cookie cutter, cut out rounds from the dough.
- Place the cookie rounds in a silicone mold with 4cm cavities or directly on a baking sheet lined with parchment paper.
- Bake for 15 minutes until lightly golden.
- Remove from the oven, unmold the cookies, and let them cool completely before serving.
- Store in an airtight container or cellophane bags to maintain freshness.
