Ingredients

Instructions

  1. Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. Place a saucepan over medium heat and add the butter. Stir until completely melted, then continue cooking while stirring occasionally until the butter begins to foam and develop brown flecks. Keep stirring until the butter turns a deep golden brown with a nutty aroma. Remove from heat immediately and pour into a large mixing bowl.
  3. Add the brown sugar to the browned butter and whisk to combine. Let the mixture cool for 5-10 minutes.
  4. While the butter mixture cools, mash the bananas in a separate bowl until smooth with some small chunks remaining.
  5. Once the butter mixture has cooled slightly, whisk in the eggs and vanilla extract until well combined.
  6. Stir in the mashed bananas until incorporated.
  7. In a separate bowl, combine the flour, baking soda, and salt.
  8. Add the dry ingredients to the wet ingredients and gently fold until just combined. Do not overmix.
  9. Fold in the chopped dates and dark chocolate chunks, reserving a small handful of chocolate for topping.
  10. Pour the batter into the prepared loaf pan and sprinkle the reserved chocolate on top.
  11. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  12. Allow to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
