  1. Preheat the oven to 175°C and prepare a water bath
  2. In a bowl whisk together eggs milk vanilla extract and a pinch of salt until well combined
  3. Pour the mixture into a round ceramic ramekin
  4. Place the ramekin in the water bath and bake for 35 to 40 minutes until the flan is set but still slightly jiggly in the center
  5. Let it cool completely then refrigerate for at least 2 hours
  6. Before serving drizzle with yacon syrup and sprinkle with chopped hazelnuts
  7. Serve chilled as a healthy breakfast or dessert option
