- Preheat the oven to 175°C and prepare a water bath
- In a bowl whisk together eggs milk vanilla extract and a pinch of salt until well combined
- Pour the mixture into a round ceramic ramekin
- Place the ramekin in the water bath and bake for 35 to 40 minutes until the flan is set but still slightly jiggly in the center
- Let it cool completely then refrigerate for at least 2 hours
- Before serving drizzle with yacon syrup and sprinkle with chopped hazelnuts
- Serve chilled as a healthy breakfast or dessert option
