- In a saucepan, melt 2 tablespoons of white sugar over low heat until it forms a caramel.
- Add the coconut sugar and warm water, stir to combine.
- Cook for 5 minutes over medium heat.
- Remove from heat and add the lemon zest, orange zest, vanilla extract, and cinnamon.
- Return to heat and bring to a boil for 5 minutes.
- Remove from heat and add the lemon juice, orange juice, lime zest and juice, nutmeg, coriander, and star anise.
- Let the mixture infuse for 30 minutes, then strain into a 1-liter bottle.
- Refrigerate for 24 hours to cool completely.
- Add the lemonade or sparkling water before serving.
- You can also keep the syrup without adding lemonade and use it as needed.
- Serve over ice cubes for a refreshing homemade cola.
