  1. In a saucepan, melt 2 tablespoons of white sugar over low heat until it forms a caramel.
  2. Add the coconut sugar and warm water, stir to combine.
  3. Cook for 5 minutes over medium heat.
  4. Remove from heat and add the lemon zest, orange zest, vanilla extract, and cinnamon.
  5. Return to heat and bring to a boil for 5 minutes.
  6. Remove from heat and add the lemon juice, orange juice, lime zest and juice, nutmeg, coriander, and star anise.
  7. Let the mixture infuse for 30 minutes, then strain into a 1-liter bottle.
  8. Refrigerate for 24 hours to cool completely.
  9. Add the lemonade or sparkling water before serving.
  10. You can also keep the syrup without adding lemonade and use it as needed.
  11. Serve over ice cubes for a refreshing homemade cola.
