  1. Mix flour brown sugar vanilla sugar baking soda and salt in a bowl
  2. Add the softened butter and egg to the dry ingredients and mix well until combined
  3. Form the dough into a ball wrap in plastic wrap and refrigerate for 2 hours
  4. Preheat the oven to 180C 350F
  5. Roll out the dough on a floured surface to approximately 5mm thickness
  6. Cut out circles using a glass as a cookie cutter
  7. Place cookies on a baking sheet lined with parchment paper
  8. Prick each cookie with a knife tip
  9. Bake for approximately 12 minutes until golden brown
  10. Allow cookies to cool completely
  11. Melt dark chocolate in a double boiler
  12. Let the melted chocolate cool for 30 minutes
  13. Using a brush coat each cookie with melted chocolate
  14. Allow chocolate coating to set completely before serving
