  1. In a large bowl, mix the flour and salt together.
  2. In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes until foamy.
  3. Pour the yeast mixture into the flour and mix until a dough forms.
  4. Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm place for 1 hour or until doubled in size.
  6. Punch down the dough and divide it into 8 equal pieces.
  7. Roll each piece into a ball, then press your thumb through the center to create a hole. Gently stretch the ring to about 8cm in diameter.
  8. Place the shaped bagels on a baking sheet lined with parchment paper, cover lightly, and let rest for 20 minutes.
  9. Meanwhile, preheat the oven to 220°C and bring a large pot of water to a boil. Add the honey or malt syrup to the water.
  10. Boil the bagels in batches for 1 minute on each side.
  11. Return the boiled bagels to the baking sheet, brush with egg white, and sprinkle with your desired toppings.
  12. Bake for 20-25 minutes until golden brown.
  13. Cool on a wire rack for at least 10 minutes before slicing.
  14. Serve with cream cheese and fresh herbs if desired.
