  1. Start by making the custard combine sugar and cornstarch in a saucepan
  2. Add egg yolk and gradually whisk in the milk and vanilla extract
  3. Cook over medium heat stirring constantly until thickened Set aside to cool
  4. For the almond cream cream together butter and sugar until light and fluffy
  5. Beat in eggs one at a time then fold in almond flour until well combined
  6. Roll out puff pastry sheets and cut into two circles
  7. Spread cooled custard in the center of one circle leaving a border
  8. Top custard with almond cream mixture
  9. Brush border with water and cover with second pastry circle
  10. Press edges to seal and create a decorative pattern
  11. Mix egg yolk with heavy cream and brush over the top
  12. Score a decorative pattern on top without cutting through
  13. Bake at 180C 350F for 30 to 35 minutes until golden brown
  14. Allow to cool before serving
