- Start by making the custard combine sugar and cornstarch in a saucepan
- Add egg yolk and gradually whisk in the milk and vanilla extract
- Cook over medium heat stirring constantly until thickened Set aside to cool
- For the almond cream cream together butter and sugar until light and fluffy
- Beat in eggs one at a time then fold in almond flour until well combined
- Roll out puff pastry sheets and cut into two circles
- Spread cooled custard in the center of one circle leaving a border
- Top custard with almond cream mixture
- Brush border with water and cover with second pastry circle
- Press edges to seal and create a decorative pattern
- Mix egg yolk with heavy cream and brush over the top
- Score a decorative pattern on top without cutting through
- Bake at 180C 350F for 30 to 35 minutes until golden brown
- Allow to cool before serving
