- Line a loaf pan with plastic wrap ensuring enough overhang on all sides
- Pour the orange juice in a shallow dish
- Quickly dip each ladyfinger in the orange juice do not soak them too long
- In a large bowl whip the heavy cream with powdered sugar until soft peaks form
- In another bowl mix the mascarpone cheese with vanilla until smooth
- Gently fold the whipped cream into the mascarpone mixture
- Place a layer of soaked ladyfingers at the bottom of the prepared loaf pan
- Spread one third of the cream mixture over the biscuits
- Add a layer of mandarin segments
- Repeat the layers finishing with the cream mixture
- Cover with the plastic wrap overhang and refrigerate overnight
- The next day unmold the cake onto a serving plate
- Cover the entire cake with the remaining cream mixture creating vertical lines for a log effect
- Decorate with mandarin segments and any additional desired garnishes
- Keep refrigerated until serving
