- Season pork ribs with fish sauce black pepper garlic and shallots marinate for 30 minutes
- Heat oil in a pot and brown the marinated pork ribs
- Add turmeric powder and pork broth simmer for 45 minutes until meat is tender
- Meanwhile boil quail eggs for 3 minutes then peel and set aside
- Cook rice noodles according to package instructions drain and portion into bowls
- Divide the cooked pork and quail eggs among the noodle bowls
- Ladle a small amount of the turmeric broth over each bowl
- Top with chopped peanuts and green onions
- Serve with fresh herbs lettuce and nuoc cham dipping sauce on the side
