  1. Peel the plantains and slice them diagonally into 1 cm thick slices.
  2. In a small bowl, mix salt, cumin, and turmeric.
  3. Heat the vegetable oil in a large frying pan over medium heat.
  4. Fry the plantain slices in batches until golden brown on both sides, about 2-3 minutes per side.
  5. Transfer to a paper towel-lined plate and immediately sprinkle with the spice mixture while still hot.
  6. For the tomato topping, combine the diced tomatoes, red onion, minced garlic, olive oil, lime juice, chopped basil, and cilantro in a bowl.
  7. Season with salt and pepper to taste. Allow the mixture to sit for at least 15 minutes for the flavors to meld.
  8. Arrange the fried plantain slices on a serving platter.
  9. Top each plantain slice with a spoonful of the tomato mixture.
  10. Garnish each bite with a small basil leaf.
  11. Serve immediately as an elegant appetizer.
