- Rub the chicken pieces with olive oil, salt, pepper, and your chosen spices. Let them marinate for 1-2 hours.
- Heat a large casserole dish or dutch oven over medium heat. Add the chicken pieces and cook until they are well browned on all sides.
- Once the chicken is browned, add the tomato sauce to the pot. Reduce the heat to low, cover the pot, and let it simmer for 45 minutes.
- If you’re using olives, add them to the pot 20 minutes before the end of the cooking time.
- While the chicken is simmering, cook your fresh pasta according to the package instructions.
- Serve the chicken and sauce over the pasta.
