  1. Rub the chicken pieces with olive oil, salt, pepper, and your chosen spices. Let them marinate for 1-2 hours.
  2. Heat a large casserole dish or dutch oven over medium heat. Add the chicken pieces and cook until they are well browned on all sides.
  3. Once the chicken is browned, add the tomato sauce to the pot. Reduce the heat to low, cover the pot, and let it simmer for 45 minutes.
  4. If you’re using olives, add them to the pot 20 minutes before the end of the cooking time.
  5. While the chicken is simmering, cook your fresh pasta according to the package instructions.
  6. Serve the chicken and sauce over the pasta.
