- Blanch the smoked sausages in boiling water for 8 minutes, then slice them into rounds
- Heat oil in a large pan over medium heat and sauté the chopped onions until translucent
- Add minced garlic and grated ginger, cook for another minute until fragrant
- Add the diced tomatoes and cook until they start to break down
- Stir in the turmeric powder and fresh thyme
- Add the shredded jackfruit and cook for 5 minutes
- Add the rice and stir well to coat with the spices
- Pour in the water, add salt to taste, and bring to a boil
- Reduce heat, cover, and simmer for about 15-20 minutes until rice is tender
- Add the sliced sausages on top of the rice, cover and cook for an additional 5 minutes
- Garnish with fresh herbs if desired and serve hot
