  1. Blanch the smoked sausages in boiling water for 8 minutes, then slice them into rounds
  2. Heat oil in a large pan over medium heat and sauté the chopped onions until translucent
  3. Add minced garlic and grated ginger, cook for another minute until fragrant
  4. Add the diced tomatoes and cook until they start to break down
  5. Stir in the turmeric powder and fresh thyme
  6. Add the shredded jackfruit and cook for 5 minutes
  7. Add the rice and stir well to coat with the spices
  8. Pour in the water, add salt to taste, and bring to a boil
  9. Reduce heat, cover, and simmer for about 15-20 minutes until rice is tender
  10. Add the sliced sausages on top of the rice, cover and cook for an additional 5 minutes
  11. Garnish with fresh herbs if desired and serve hot
