  1. Clean the clams thoroughly by soaking them in salted water for 30 minutes to remove sand then rinse well
  2. Heat oil in a large pot over medium heat Add the bruised lemongrass and minced garlic Stir fry until fragrant about 1 minute
  3. Add the clams to the pot and stir to combine
  4. Pour in the water and fish sauce Cover the pot and increase heat to high
  5. Steam for 5 to 7 minutes until all clams have opened discard any that remain closed
  6. Add the green onions and chilies if using
  7. Give everything a quick stir and transfer to a serving bowl
  8. Serve hot with lime wedges on the side
