Instructions

  1. Bring the chicken or pork broth to a simmer in a pot
  2. Add sliced galangal lemongrass and coriander roots to the broth
  3. Add shallots and straw mushrooms and simmer for 2 minutes
  4. Add the chili paste and stir until well combined
  5. Add the prawns and cook until they turn pink
  6. Pour in the fish sauce lime juice and unsweetened condensed milk
  7. Add the birds eye chilies and kaffir lime leaves
  8. Simmer for another 2 minutes until all flavors are well combined
  9. Garnish with fresh coriander leaves
  10. Serve hot in bowls
