Instructions
- Bring the chicken or pork broth to a simmer in a pot
- Add sliced galangal lemongrass and coriander roots to the broth
- Add shallots and straw mushrooms and simmer for 2 minutes
- Add the chili paste and stir until well combined
- Add the prawns and cook until they turn pink
- Pour in the fish sauce lime juice and unsweetened condensed milk
- Add the birds eye chilies and kaffir lime leaves
- Simmer for another 2 minutes until all flavors are well combined
- Garnish with fresh coriander leaves
- Serve hot in bowls
