  1. In a food processor or blender, combine the chopped onion, minced garlic, and grated ginger with 2 tablespoons of cooking oil. Blend until you get a smooth paste.
  2. Place the chicken pieces in a large bowl.
  3. Add the onion-garlic-ginger paste to the chicken along with Royco seasoning, tomato paste, turmeric, paprika, black pepper, and salt.
  4. Mix thoroughly with your hands, ensuring all chicken pieces are well coated with the marinade.
  5. Cover the bowl and let the chicken marinate for at least 20 minutes, preferably 2-4 hours in the refrigerator for better flavor.
  6. Prepare a charcoal grill to medium heat. If using a gas grill, preheat to medium (about 350°F/175°C).
  7. Remove the chicken from the marinade and place directly on the grill grates.
  8. Grill the chicken for about 25-30 minutes, turning occasionally, until the internal temperature reaches 165°F (74°C) and the outside is nicely charred and crispy.
  9. Serve hot with a side of chips (French fries), roasted plantains, or a fresh salad.
