- In a large bowl cream together the softened butter and powdered sugar until light and fluffy
- Add the egg and mix until well combined
- In a separate bowl whisk together the flour almond flour and salt
- Gradually add the dry ingredients to the butter mixture and mix until a dough forms
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour
- Preheat oven to 180C 350F
- Roll out the dough on a floured surface to about 14 inch thickness
- Cut out cloud shaped cookies and place on a lined baking sheet
- Bake for 10 to 12 minutes until edges are lightly golden
- Let cool completely on a wire rack
- For the royal icing Mix the powdered sugar and egg whites until smooth
- Add the vinegar or lemon juice and mix well
- Divide the icing and add food coloring as needed brown for antlers black for eyes and red for noses
- Transfer each color to separate piping bags
- Decorate cookies with white royal icing as the base let it dry
- Add the antlers eyes and nose details to create reindeer faces
- Let the icing dry completely before storing
