- In a bowl, mix all the dry ingredients together (gluten flour, chickpea flour, nutritional yeast, salt, pepper, cumin, and nutmeg).
- Dissolve the vegetable bouillon cube in hot water.
- Add the bouillon, oil, tomato paste, and minced garlic (reduced to a paste) to the dry ingredients.
- Vigorously knead the mixture for about 5 minutes, adding a little extra oil if needed to form a cohesive dough.
- Shape the dough into a uniform log (without cracks) about 20cm long and 6cm in diameter.
- Place the log on a large sheet of parchment paper and roll it up 3-4 times. Twist and tie the ends of the paper.
- Wrap the parchment-covered log in plastic wrap, making sure it’s completely sealed. Tie the ends securely.
- Place the wrapped sausage in a pot of boiling water and cook for 35-40 minutes.
- Turn off the heat and allow the sausage to remain in the water until it cools completely before unwrapping.
- Once cooled, slice and serve with pickles, in sandwiches with fresh vegetables, or use in hot dishes by pan-frying the slices before adding to recipes like lentil stews.
