  1. In a bowl, mix all the dry ingredients together (gluten flour, chickpea flour, nutritional yeast, salt, pepper, cumin, and nutmeg).
  2. Dissolve the vegetable bouillon cube in hot water.
  3. Add the bouillon, oil, tomato paste, and minced garlic (reduced to a paste) to the dry ingredients.
  4. Vigorously knead the mixture for about 5 minutes, adding a little extra oil if needed to form a cohesive dough.
  5. Shape the dough into a uniform log (without cracks) about 20cm long and 6cm in diameter.
  6. Place the log on a large sheet of parchment paper and roll it up 3-4 times. Twist and tie the ends of the paper.
  7. Wrap the parchment-covered log in plastic wrap, making sure it’s completely sealed. Tie the ends securely.
  8. Place the wrapped sausage in a pot of boiling water and cook for 35-40 minutes.
  9. Turn off the heat and allow the sausage to remain in the water until it cools completely before unwrapping.
  10. Once cooled, slice and serve with pickles, in sandwiches with fresh vegetables, or use in hot dishes by pan-frying the slices before adding to recipes like lentil stews.
