- Preheat oven to 350F and place the rack in the center position
- Grease a muffin tin or line with paper liners and set aside
- In a large bowl mix together flour quick oats baking powder baking soda and salt set aside
- In a blender combine bananas spinach milk egg maple syrup and melted butter blend until completely smooth
- Pour the wet ingredients into the dry ingredients and mix until just combined
- Divide the batter evenly between the muffin cups
- Sprinkle additional oats on top of each muffin
- Bake for 18 to 22 minutes or until a toothpick inserted in the center comes out clean
- Let cool on a wire rack before serving
