  1. Heat a large cast iron skillet on the barbecue grill until hot.
  2. Add the olive oil to the skillet, then add the bacon lardons and cook until they begin to render their fat, about 3-4 minutes.
  3. Add the diced onion and cook until translucent, about 2-3 minutes.
  4. Add the minced garlic and cook for 30 seconds until fragrant.
  5. Add the diced potatoes to the skillet and cook for about 5 minutes, stirring occasionally.
  6. Add the sliced carrots, dried thyme, salt, and pepper to the skillet. Mix well to combine all ingredients.
  7. Cover the skillet with aluminum foil if available, or close the barbecue lid, and cook for about 15-20 minutes, stirring occasionally until the carrots and potatoes are tender and slightly caramelized.
  8. Taste and adjust seasoning if necessary.
  9. Sprinkle with fresh parsley before serving.
  10. Serve hot as a side dish or a light main course with a fresh salad.
