- Heat a large cast iron skillet on the barbecue grill until hot.
- Add the olive oil to the skillet, then add the bacon lardons and cook until they begin to render their fat, about 3-4 minutes.
- Add the diced onion and cook until translucent, about 2-3 minutes.
- Add the minced garlic and cook for 30 seconds until fragrant.
- Add the diced potatoes to the skillet and cook for about 5 minutes, stirring occasionally.
- Add the sliced carrots, dried thyme, salt, and pepper to the skillet. Mix well to combine all ingredients.
- Cover the skillet with aluminum foil if available, or close the barbecue lid, and cook for about 15-20 minutes, stirring occasionally until the carrots and potatoes are tender and slightly caramelized.
- Taste and adjust seasoning if necessary.
- Sprinkle with fresh parsley before serving.
- Serve hot as a side dish or a light main course with a fresh salad.
