- Coat the lamb pieces in flour seasoned with salt and pepper
- Heat duck fat in a large cast iron pot over medium high heat
- Brown the floured lamb pieces on all sides until golden brown Remove and set aside
- In the same pot saute the sliced onions until caramelized
- Add minced garlic and cook for another minute
- Return the lamb to the pot
- Add potatoes carrots bay leaves rosemary thyme and black olives
- Pour in the water and bring to a boil
- Reduce heat cover and simmer for 2 to 2.5 hours until meat is tender and vegetables are cooked
- Adjust seasoning with salt and pepper to taste
- Let rest for 10 minutes before serving
