  1. Coat the lamb pieces in flour seasoned with salt and pepper
  2. Heat duck fat in a large cast iron pot over medium high heat
  3. Brown the floured lamb pieces on all sides until golden brown Remove and set aside
  4. In the same pot saute the sliced onions until caramelized
  5. Add minced garlic and cook for another minute
  6. Return the lamb to the pot
  7. Add potatoes carrots bay leaves rosemary thyme and black olives
  8. Pour in the water and bring to a boil
  9. Reduce heat cover and simmer for 2 to 2.5 hours until meat is tender and vegetables are cooked
  10. Adjust seasoning with salt and pepper to taste
  11. Let rest for 10 minutes before serving
