- Combine warm milk sugar and yeast in a bowl Let stand for 5 minutes until foamy
- In a large mixing bowl combine flour and salt
- Add eggs ube paste and the yeast mixture to the flour
- Mix until a shaggy dough forms then add softened butter
- Knead the dough for 10 to 15 minutes until smooth and elastic
- Place in a greased bowl cover and let rise for 1 hour or until doubled in size
- Punch down the dough and divide into 12 equal portions
- Shape each portion into a roll and place on a lined baking sheet
- Cover and let rise again for 30 minutes
- Preheat oven to 180C 350F
- Bake for 18 to 20 minutes until lightly golden
- While still warm brush each roll generously with softened butter
- Roll in shredded coconut to coat
- Dust with powdered sugar before serving
