- In a food processor or blender, combine the chopped onion, minced garlic, and grated ginger with 2 tablespoons of cooking oil. Blend until you get a smooth paste.
- Place the chicken pieces in a large bowl.
- Add the onion-garlic-ginger paste to the chicken along with Royco seasoning, tomato paste, turmeric, paprika, black pepper, and salt.
- Mix thoroughly with your hands, ensuring all chicken pieces are well coated with the marinade.
- Cover the bowl and let the chicken marinate for at least 20 minutes, preferably 2-4 hours in the refrigerator for better flavor.
- Prepare a charcoal grill to medium heat. If using a gas grill, preheat to medium (about 350°F/175°C).
- Remove the chicken from the marinade and place directly on the grill grates.
- Grill the chicken for about 25-30 minutes, turning occasionally, until the internal temperature reaches 165°F (74°C) and the outside is nicely charred and crispy.
- Serve hot with a side of chips (French fries), roasted plantains, or a fresh salad.
