  1. Fill a 12-ounce Mason Jar halfway with your choice of milk.
  2. Add 1/8 cup of Chia seeds to the jar.
  3. Immediately put on the lid and shake the jar for about 15 seconds. This is to prevent the Chia seeds from clumping together.
  4. Fill the rest of the jar with your milk and give it another shake.
  5. Shake the jar a couple more times over the next five minutes.
  6. Refrigerate the jar. By the next day, the Chia seeds will have absorbed much of the milk, giving it the consistency of rice pudding.
  7. Before serving, you can add any flavors you like. For example, a dash of vanilla extract, fresh or frozen berries, a dollop of your favorite sugar-free nut butter, or a sprinkle of walnuts and pecans.
  8. If you like apples, you can also add a chopped Granny Smith apple. It has half the sugar and carbohydrates of most apples and can help with digestion.

Note: As with all new foods with a lot of fiber, it is best to start slowly so as not to cause digestive issues. If or on prescription medications, you should check with your doctor before consuming Chia seeds.
